Adding a disc brake mount is a great way to increase stopping power on bikes originally built with rim brakes. This is a retrofit that we do regularly on titanium and steel frames, and some forks.

You can run whatever rims with a disc brakeset just as long the hubs has the mount for a brake disc to be fitted on. Same goes for the fork as you need the standardized caliper mounts to fix the brake against the fork. So basically even if your rims are designed for rim brakes you can still run a disc brake no problem.
