American sycamore trees are generally huge, being one of the largest hardwood species in North America, growing throughout the eastern and central USA in natural hardwood forests.

Qt-sawn sycamore is one of my favorite looking woods but I would not recommend it for a cutting board for the reasons given above. It’s grain patterns are awesome but tend to be brittle and flake off during planing. I put it very high on the list for something like a box.

In order to be stable the wood must be quartersawn. Sycamore trees can grow to be one of the biggest domestic timbers in North America and are often left to grow to full maturity because the wood is very difficult to split for firewood and most sawmills don’t quarter saw.
