Can I use a ZZ (steel seal) ball bearing instead of an RS (rubber seal)? Yes, but it won’t be water tight, or keep out small particles of dirt or dust. You might have to lubricate them more often, as there are no actual seals to keep oil/grease in there.

The 2RS are sealed for life bearings i.e. the grease within the bearing cannot get out or contaminants get into the bearing and damage it. The ZZ are just a metal shield to stop larger contaminants damaging the bearing.
